Wednesday's Dinner

I think last night I made the tastiest, most versitile dinner ever.

It was hot. I wanted something light and cool. Thanks to the internet I found it. Google it for a recipe you like. Seriously - they are out there all over the place.
Gazpacho and Black Bean and Corn Salad with Pan Seared Scallops

I have a conference call later tonight so just threw together the leftover black bean and corn salad with a bit of goat cheese and I am full and happy and good lord I want to just lie back and read but now I have the energy to get through the call!
